(The Dune Preserve, Anguilla) – Fresh off of his appearance on ABC’s The Bachelor, Bankie Banx has announced the lineup for Moonsplash 2011.  Bankie Banx will welcome Black Uhuru, Alaine, Orange Grove, British Dependency, Tahirah Banks, Ruffy, DJ Jazzy Jay, along with Moonsplash Allstars Cat Coore, Benjy Myaz and Junior Jazz.  This year’s festival will run from Thursday March 17 through Sunday March 20.

Alaine Laughton
Alaine Laughton, known by her first name, is a singer and songwriter. She was born in New Jersey, but moved to Jamaica at the age of three.

In 1988, Alaine appeared in movie Clara's Heart along side Whoopi Goldberg. Through the late 1990's and early 2000s, Alaine has lived in the United States and has been songwriting and singing back up for Rocafella artists such as Cam'ron and Freeway (rapper).

Track 4 on Bankie's album "Roots & Herbs" conveys the dream that Bankie had as a young boy and

aspiring musician.  He dreamed of writing music and playing songs that would touch people and get them

thinking.  Bankie released "The Dreamer" as a track on his very first album in 1977 - "Where I And I

Abide".  Bankie never imagined how well received and respected his music would be.

BLACK UHURU
The group formed in the Waterhouse district of Kingston in 1972, initially called simply "Uhuru" (the Swahili word for freedom), with a line-up of Garth Dennis, Don Carlos, and Derrick "Duckie" Simpson. Their first release was a cover version of Curtis Mayfield's "Romancing to the Folk Song", which was followed by "Time is on Our Side"; Neither was a success and they split up, with Carlos pursuing a solo career, as did Dennis, before joining The Wailing Souls. Simpson also briefly worked with the Wailing Souls, before forming a new version of Uhuru with Errol Nelson (of The Jayes) and Michael Rose, the group now taking the name Black Sounds Uhuru. Their Prince Jammy-produced debut album, Love Crisis, was released in 1977.

Orange Grove was started in 2001 on the island of Sint Maarten (The West Indies). Their name also comes from an area on the island in the Cole Bay district. After the band moved to Holland things picked up suddenly and with new members all coming from different parts of the Caribbean (Aruba, Curacao, Surinam and Sint Maarten) a new strong and dedicated group was born. On February the 9th of 2007, after 7 months in the studio, Orange Grove proudly released their debut album titled ..Genuine Origins' in a sold-out Paard van Troje in The Hague. It was a monumental event with members of Intwine and Splendid accompanying them on stage. ..

Drak Throw In The Towel
Drak is one of the most popular recording artists in the Eastern Caribbean countries of Anguilla and St. Martin. The concept behind "Throw In the Towel" is that an athlete needs to train hard to keep up with his female counterparts at the dancehall. Meanwhile Drak's pulsating soca rhythm and fast paced lyrics provide the soundtrack and the motivation to keep going no matter what and never throw in the towel.

This video was shot in Anguilla, British West Indies over the course of four days. Due to logistical constraints we used only one or two lights for most of the scenes and shot the athlete scenes as a separate movie (Super Floyd) that we then edited with the rest of the scenes in music video. It was a challenge putting it all together in a way that made sense but we made it happen and the captivating result speaks for itself.

The territory of Anguilla lies 146 miles east of Puerto Rico, six miles (10 km) to the north of St. Martin and between the Caribbean Sea and North Atlantic Ocean. It is a British Overseas Territory and is the most northerly of the Leeward Islands in the Lesser Antilles.

  In essence, Anguilla can be described as a collection of flat and lowlying islands and cays of coral and limestone, with the capital - The Valley - situated on the main island of Anguilla. The total area of the territory is 102 sq km and its name, meaning ‘eel’, was the name given to it by the French because of its long, thin shape.

Donahue Jarrett At The West Indie Music Festival
anguillaDonahue Jarrett is an actor, singer and song-writer. Working with local artistes like Junior Reid, Cat Coore and Third World band, he has a style of his own.

Born and raised in Jamaica with intermittent stints in Europe and the U.S. where he served 4 years in the US Air Force and received the Air Force Achievement medal, he speaks Spanish fluently and has a working knowledge of French, German, Italian and Japanese. After returning to Jamaica from Spain and the UK he along with his brother, producer Tony Jarrett, started the band "Q-7" which recorded the tracks Life and Living (which was remixed by Toby at GeeJam studios in Port Antonio), and the single "Imagination"... The band dissolved in 2003, and production of his new tracks has been primarily in the hands of Cat Coore.

Picture waking slowly from a deep, restful sleep … Stretching…Lazily…Luxuriating in a new beginning…The rustle of the wind in the coconut palms…The whisper of the waves gently returning to shore, for even they cannot bear to be away too long. The joyous calling of the banana quits….A deep, deep breath of fresh, unpolluted air brings the smell of the island to you…The taste of salt upon your lips… Your senses are awakened…Time to greet the day…With joy…With Thanks…With love…With anticipation.

The sky dotted with light, fluffy cotton ball clouds…Moving slowly southwards to St. Martin…Viewed like a postcard across the tranquil water…Hummingbirds sipping on nectar of hibiscus and oleander…. Hovering, displaying the variety of colours of their plumage…The sand so dazzlingly white it pains the eyes…unless sunglasses are used. Pristine. Pure…just like the water…So transparent that the details of fish are clearly seen.

Oxtail and Lima Bean Stew
Oxtail and Lima Bean Stew
Stews are very common in Jamaican cuisine. This is a legacy from the African slaves brought to the island during the slave trade that began in the 1600s. They put to use their skill of foraging for local ingredients and boiling them up into hearty one-pot meals.
Makes: 4 to 5 servings
Preparation & Cooking Time: 2 to 3 hours

Ingredients:

* 3 pounds / 1.75 kg oxtail, cut at the joint by your butcher
* 2 large onions, chopped (about 3 cups / 750 mL)
* 6 cloves garlic, chopped (about 3 tablespoons / 45 mL)
* 2 tablespoons / 25 mL soy sauce
* 1 teaspoon / 5 mL salt
* 1 large tomato, diced (about 2 cups / 500 mL)
* 1 (16-ounce / 454-g) can lima beans, drained and rinsed
* 2 sprigs of fresh thyme (or 1 teaspoon / 5 mL dried thyme)
* 2 tablespoons / 25 mL butter
* 1 teaspoon / 5 mL black pepper

Method:

Wash the oxtail in cold water. In a stockpot, combine the oxtail, half of the onions, the garlic, soy sauce, and salt. Add enough water to come halfway up the oxtail. Bring to a rolling boil, occasionally skimming the scum as it forms, usually in the first 10 minutes of boiling. Reduce the heat and simmer until the oxtail is tender, about 1 hours.

Once the oxtail is tender, there should be about 2 cups / 500 mL of liquid in the stockpot. If the liquid level is low, add enough to make 2 cups / 500 mL. Add the remaining onion, tomato, lima beans, thyme, butter, and black pepper. Cover and simmer for 10 to 15 minutes or until the lima beans are hot but not mushy. Remove the thyme sprigs before serving.

Serve hot with white rice and boiled green bananas.
 
Shrimp Braised in Coconut Milk
Shrimp Braised in Coconut Milk
Makes: 4 to 6 servings

Ingredients:

* 2 lbs. large shrimp
* 2 cups canned whole tomatoes, chopped
* 4 cups water
* 3 Tbsp. flour
* 2 Tbsp. lime juice
* 2 cups unsweetened coconut milk
* 3 Tbsp. olive oil
* 1 cup sliced green scallions
* 2 cloves garlic, crushed
* 1 cup chopped fresh cilantro
* 1 red pepper, thinly sliced diced
* hot chillies or hot pepper sauce to taste
* 2 onions, thinly sliced

Method:
Peel & devein shrimp; reserve shells. In a small saucepan, simmer shells in 4 cups of water for 15 minutes. Pour broth through sieve & discard the shells. While shells are simmering, in a bowl combine shrimp, lime juice & salt to taste. Cover & chill.
Cook garlic, onion, & red pepper until soft. Add flour & cook, stirring for 1 minute. Stir in tomatoes, coconut milk & 2 cups shrimp broth. Allow to simmer, stirring occasionally for 20 minutes. Add shrimp & simmer until shrimp are just cooked through (about 3 minutes).

Serve over coconut rice & garnish with chopped scallions & cilantro. Serve diced hot chillies or hot pepper sauce on the side for those who enjoy spice!

Pigeon Peas and Rice is known to be one of the most popular national dish in Anguilla. This dish is good affordable and is Definitely worth checking out.

Anguilla’s national dish is a delicious meal, it is prepared and served in many different ways for break-fast, lunch and dinner.

Pigeon peas grow as a crop in Anguilla and this dish usually taste best when fresh peas are used, but dried or even canned peas work almost as well. This dish taste best when you serve it immediately hot garnished with sprigs of oregano if desired.

Pigeon Peas & Rice

Ingredients:

-water
-lime juice
1 cup of rice
1/4 teaspoon of thyme
1 tablespoons of butter
-a dash of hot pepper sauce
1/4 pound of salt beef (Optional)
2 ounces of dried pigeon peas or 1/2
-pound of fresh pigeon peas or 1 can
-of pigeon peas 16 ounces
-black pepper to taste
-salt to taste

Directions:
First soak the dried peas in the water over night. Throw away the water. Add some fresh water and cut the beef. Simmer until cooked.
Measure the liquid then add water to make 2 cups of liquid. If using fresh green pigeon peas, let simmer in salt water until cooked.
Next measure the liquid then add the water to make up for 2 cups of liquid. If using a can of peas, add the water to make up for 2 cups of liquid.

Finally bring the peas and 2 cups of liquid to a boil, add 1 cup of rice and seasonings stir, cover and simmer until all the liquid has been absorbed for about 20 minutes.

 
Spicy Corn Muffins
Makes: 12 muffins

Ingredients:

* 6 slices bacon
* 1 cup finely chopped onion
* 1 cup flour
* 1 cup cornmeal
* 3 Tbsp. sugar
* 3 tsp. baking powder
* 1 tsp. salt
* 2 eggs
* 1 cup milk
* 3 Tbsp. butter, melted
* 1 cups grated cheddar cheese
* 1 cup pickled jalapeo chillies

Method:

Saut bacon until crisp and drain on paper towel. Saut onion. Break bacon into small pieces and combine with onion. Combine flour, cornmeal, sugar, baking powder, and salt, blending well. Separately heat together the eggs, milk, and butter. Add the wet ingredients to the dry ingredients, beating until just moistened. Stir in the bacon and onion, 1 cup of the cheese, and the jalape�os. Fill buttered muffin cups three quarters full and top with remaining cheese. Bake at 425� for 20 minutes or until golden brown.
 
Anguilla Conch Salad
Conch Salad
Makes: 8 servings
Ingredients:

* 4 large conchs cut into cubes
* 1 cup dice celery
* 1 cup dice green pepper
* 1 cup dice onion
* 1 cup dice ripe tomatoes
* 1/3 cup freshly squeezed lime juice
* 1/3 cup freshly squeezed lemon
* juice
* salt to taste
* hot peppers (bird or goat) to taste


Method:
Wash the conchs in cold water, cut into cubes, place into a large serving bowl and sprinkle with the salt.
Mix the lime and lemon juices together in a small dish. Crush the hot peppers into the juices; pour over the conch adding the diced vegetables and mix gently.
Taste-test and adjust the seasonings. Spoon into salad cups or place on a bed of lettuce. Serve with a small dish of lime juice and crushed peppers on the side.

Variation:
Serve in half avocado or tomato star.

Tip:
Fresh conchs are best, but frozen conchs can be used. Special order conchs from your fish market.

Ingredients:

* 1lt milk
* 1lb granulated sugar
* 1 vanilla pod
* juice from 2 lemons
* It heavy cream
* 6 egg yolks
* 1lb 2 oz sour cream

Method:

In a medium bowl put the 6 yolks, 2 oz milk, sugar and the seeds from the pod. Whisk for 3-4 minutes until thick. Scald the milk, cream and pod. Pour the mixture over the yolks, gradually whisking.
Return the custard to the pot and cook on low heat stirring constantly with a wooden spoon until thickened slightly. Do not overcook or allow the custard to boil. Remove from heat. Put into a bowl over an ice bath. When cool, stir in the sour cream and lemon juice.
Place the mixture into an ice-cream maker, churn for about 20 minutes and freeze.

Anguilla wins medals at the recent Caribbean Teachers Union Games

Anguilla’s delegation to the recent Caribbean Teachers Union games which were held on the 24th-25th July 2010 in St. Kitts returned home on Monday. Anguillan athletes competed with fellow athletes from Jamaica, Barbados, and Trinidad amongst other countries.  With fourteen countries show casing their talent, two Anguillian athletes rose to the challenge and secured three medals for Anguilla.  T’Arah Niles won a silver medal in the high jump with a height of 1:40m and a bronze in the cricket ball throw with a distance of 52.29m in the Girls under 13 competitions.  Her counterpart Richelle Meade won the bronze medal in the U15 girls’ high jump with a height of 1:53m.

Ken's Pork

ken bbq anguillaKen sets up across from the Peoples Market on Saturday from noon till he runs out and a little further down the road on Friday evenings. Ken raises his own pork in Welches and slices it thin to grill. He also does chicken and ribs but the real treat is the pork. He provides limes or lemon, you cut them and spray the juice on the pork. He usually has Johnny cakes and cold drinks.

La Vue, Anguilla’s newest tourism property has opened on Back Street where Flavours Restaurant used to be. Owned and managed by Kirk and Joy Hughes the new luxury bed and breakfast property has seventeen rooms. All are spacious and feature king sized beds, air conditioning, private bathrooms, private balconies and a fully stocked efficiency kitchen.

Jr. Calypsoians Ready & Excited for Summer Festival 2010
AnguillaThe Junior Calypsoians and the executive Committee were invited to Viceroy Anguilla by the General Manager to enjoy a complimentary Fruit Punch Cocktail and a tour of the Resort and its facilities by the Front Office Manager Mr. Trevor Richardson on Saturday April 17th  , as part of the Calypsoians recreational events leading up to the Summer Festival.


The visit was described by the young Calypsoians as very exciting and welcoming. The design and structure of the facilities fascinated them. The committee was very pleased with the services of the bartenders and that of Mr. Richardson.
